Unite Fitness Retreat Comfort Food Recipe
Baby it’s cold outside…Why not warm up with a some homemade comfort food you can easily take with you on the run. This easy to make soup will warm your insides while you go on a hike or take a walk on your lunch break. This recipe created by our own amazing dietician, Brooke, will leave you energized and ready for whatever adventure you take.
ANTI-INFLAMMATORY MINESTRONE SOUP
INGREDIENTS & DIRECTIONS
- 2 ½ cups diced onion
- 2 cups diced carrot
- 2 cups diced celery
- 1 ½ tsp pepper
- 1 ½ tsp garlic powder
- 2 tsp dry basil
- 2 tsp oregano
- In a large pot add 2 TBS olive oil and heat over medium. Sauté all the above veggies until soft then add:
- 1 chicken breast
- 2 cans diced tomatoes
- 1 small can tomato paste
- 1 ½ – 2 quarts low sodium chicken bone broth to cover
Simmer for 1 hour. Then add:
- 2 cups chopped cabbage
- 2 cups chopped kale
- 1 can garbanzo beans
- 1 can kidney beans, drained and rinsed.
If more bone broth is needed to cover all the ingredients add it now.
Cook until greens are soft. Freeze leftovers in useable portions and enjoy your own healthy comfort food on the go in a thermos!
