This is one of our favorite recipes our fantastic chef creates for us at the Fitness Camp. Try it at home!
Ingredients
1 onion, diced
4 cloves of garlic, minced
4 lbs ground lean turkey
2 cans of water chestnuts, drained
1 cup of sweet chili sauce
1 red cabbage
1 cup sliced green onions
1/4 cup olive oil blend (50/50 canola and pure olive oil)
2 heads of romaine lettuce
salt and pepper to taste
For the sweet chili sauce
3 garlic cloves, peeled
2 hot red peppers ( jalapeno, serrano, thai, cayenne, etc.)
1/4 cup honey
3/4 cup water
1/4 cup vinegar
1/2 teaspoon salt
1 tablespoon cornstarch
2 tablespoons water
Process
For the sauce, mix all ingredients minus the cornstarch and water in a blender until smooth and transfer to a pan and simmer for 5 minutes. Mix cornstarch and water and add to sauce. Turn heat to medium and cook until sauce is lightly thick. Set aside. On a hot pan add oil and onions, cook for 1 minute and add turkey and cook for 5 minutes while stirring. Add water chestnuts, chili sauce, slat pepper (dash) and garlic. Cook for an additional 10 minutes stirring as needed. Meanwhile shred cabbage and wash romaine leafs. To serve scoop the turkey mix into lettuce leaf and garnish with cabbage and green onions.
