What the heck is a Veggie Noodler?

Let’s talk pasta:

Pasta is delicious and such a comfort food!  It is always served in large portions even though a serving size is quite small (2oz dry).  Pasta fills you up and satisfies that desire to just keep eating.  The problem, as we know, is that pasta simply isn’t good for us!  It’s just a bunch of carbs with little to no nutritional value, pasta does little more than add to our waistline and unless you are carb-loading for a marathon, pasta really isn’t part of healthy eating.

Here is why I LOVE this tool:

First, look at that video, it  is mesmerizing!   This thing is FUN to use and once you try it you will want to turn anything you can get your hands on in to a noodle!  We’re talking noodles too, not just some ribbons posing as noodles.

Second, since we’re talking noodles and not ribbons it really does replace the feel and texture of a pasta noodle.  You get to FEEL like you are eating a noodle, it’s a replacement that gets pretty close to the real thing.

Third, we need to eat healthy and the more tools we have, whether a physical tool like The Noodler or a Grocery Store Cheat, or even Intuitive Eating the better our chances of sticking to our healthy eating goals.

Fourth, some of us just like the sensation of eating and that is what gets us in trouble.  I am not advocating buying The Noodler so you can binge!  I am saying for those days when you’re on the losing side of wanting to eat everything in site, maybe The Noodler can be a tool to help.  If we’re going to lose the battle of stuffing ourselves, let’s lose it to veggies and not to pasta!

Fifth, this is such a fun and easy way to get veggies in to your diet and we ALL need more vegetables in our diets.

Basil Pomodoro Zucchini Pasta with Chicken
 

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Servings: 2

Let me amend this recipe a touch:  Put the “noodles” in to a wire mesh strainer and sprinkle with a pinch of salt, place the strainer over a bowl and let set while you prep everything else, this will allow the noodles to release some of their moisture and not water-down your sauce later.

 

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1/2 pound boneless chicken breasts, roughly cubed
  • salt and pepper, to taste
  • 1/4 teaspoon garlic powder
  • 1 large clove of garlic, minced
  • 1/3 cup diced white onions
  • 1 14oz can diced tomatoes (or crushed tomatoes) with juices
  • 1-1.5 tablespoon chopped basil
  • 2 medium zucchinis, Blade C, noodles trimmed

Instructions

  1. Place a pot/saucepan over medium heat and add in the olive oil. Once the oil heats, add in the chicken. Season with salt, pepper and garlic powder. Cook for 3 minutes and then flip over, cooking another 3-5 minutes or until chicken is cooked through and no longer pink on the inside.
  2. Then, add in the garlic and onions and cook for 2-3 minutes or until onions start to soften and become translucent. Then, add in the canned tomatoes and roughly crush the tomatoes with a potato masher or the back of a fork. Bring to a boil and then reduce heat and simmer. Season with salt and pepper and let cook for 5 minutes, add in the basil and cook for another 5-10 minutes or until most of the liquid has evaporated and it is thicker, suitable for cooking with zucchini noodles. Add in the zucchini noodles and toss for 2-3 minutes or until noodles are al dente.
  3. Divide into bowls.
