Fitness Camp Recipe

Here’s a healthy alternative to traditional pasta.  Our incredible Chef Alex taught our fitness camp guests how to prepare this delicious and easy recipe in one of our recent cooking classes at Unite Fitness Retreat.  It was a huge hit!

 

Zucchini Noodles

Ingredients

  • 6 zucchini
  • 2 t salt
  • 1 T olive oil
  • 1 clove garlic (minced)
  • Salt and Pepper to taste

Directions

Cut zucchini into thin, noodle-like strips (a mandolin works well for this).  Toss with the 2 t salt and 1 T olive oil.  Put in a broiler pan and bake for 5 minutes in the oven at 350 degrees.  Season to taste with salt and pepper.

Turkey Meatballs

Ingredients

  • 1 1/2 pounds of lean ground turkey
  • 1/4 cup shredded feta cheese
  • 2/3 cup dry Italian bread crumbs
  • 1/4 cup chopped fresh basil
  • 3 T chopped fresh oregano
  • 1/4 t salt
  • 1/2 t crushed red pepper
  • 3 garlic cloves minced

Directions

Preheat ove to 400 degrees.  Combine all the ingredients together, stir well in a bowl.  Form around 30 balls out of the mixture.  Put them on a broiler pan.  Bake around 15 minutes or until a cut meatball shows no pink inside.  Service with zucchini noodles and marinara sauce.

Marinara Sauce

Ingredients

  • 3 T extra virgin olive oil
  • 3 cloves garlic, sliced
  • 1 (16 oz) can crushed tomatoes
  • 1/2 cup red wine
  • 1/2 cup balsamic vinegar
  • 1/2 cup water
  • 1 t salt
  • 1 t brown sugar
  • 6 leaves from fresh basil, torn

Directions

Heat oil in a large non-stick skillet over low heat and sauté garlic for about 2 minutes; careful not to burn.  Just as the garlic begins to turn brown, remove pan from heat.  Allow pan to cool, and add tomatoes, wine vinegar, water, salt and sugar.  Cook over medium-high heat and bring to a boil.  Reduce heat to low and simmer, covered, about 2 hours, add more water as necessary.  Remove from heat and stir in basil.
